Nasi Goreng is an Indonesian dish. It is so common, that every household has its own recipe. In The Netherlands, it is a very popular dish. As Nasi is quite 'basic', you should serve some side dishes, like sweet-and-sour vegetables, sate with peanutbutter-sauce, babi pangang (grilled bacon in a sweet-and-sour tomato sauce) etc.
In a pestle and mortar (or food processor if you have one), grind the peppercorns, nutmeg and macadamias until they form a powder. Add the remaining sauce ingredients and blend until they form a smooth paste. Add the sauce into the pan and stir for a minute. Add in the tomato paste and heat through for a final minute.
Heat the remaining oil in a wok or large, deep frying pan until almost smoking. Add the chicken and prawns, and stir-fry for 1 min. Tip in the shallots, garlic, chillies and carrots, and stir-fry for a further 2 mins until the carrot is just tender.
Method. Beat the eggs together in a large bowl and season with salt and freshly ground black pepper. Heat 1 teaspoon of the oil in a deep,wide,non-stick frying pan over a medium heat. Add half the eggs in a thin layer and cook for a few minutes, until set and golden underneath. Tip out, roll up, allow to cool, then finely slice.
